How did it get to be August 29th? WOWSERS! This month has really flown by. I SO enjoyed browsing the gallery today. I really miss being able to do that each week. (Gotta get everything re-packaged and moved…THEN I can browse again) There were lots of fabulous layouts, but here’s a few that stuck out to me today:

Hi everyone! Roxana here with another editon of the Gallery Standouts.

First an amazing layout by kirstiegai, Monkeying Around. I love the composition of her page, the clustering is beautiful and the wire holding everything is just perfect! Awesome layout!

Then this beautiful page by Karen32, Cascade- Hike. The map, compass and all the nature elements  give the outdoorsy feel to this LO, and the big pines and title as part of the pics  are a great touch! Fabulous journaling as well!

And last but not least this amazing page by Hey Jude, The Grand Kitchen Remodel. Everything in her LO is fantastic, the blended photo in the BG is just awesome and the drawer with all the tools  just so creative! Love it!!!

Hey Everyone!  It is Monday…. yes, another Monday… but it’s that fun time here on Chelle’s Creations Blog!  The time to show off some awesome layouts and Gallery Standouts!  WOOT!

OK… let’s get going.  I really love perusing the gallery and checking out pages that show-off kits in fun way.  Many times, I use a themed kit, but not in the themed way as it was intended for… so my first choice is Fun Day by Roxanamdm! A great, and perfectly titled fun layout that showcases a fun day, but also steps away from the kits themes that were used!  Love that!

Next up, I’ve chosen IKEA Cat by Hey Jude.  This was so cute to me, especially because the family pet wanted in on the action!  My grandmother’s cat *had* to be involved with unpacking every time something new arrived to the house!  It brought back some funny memories! Plus, check out the fun mix of patterns on the page.  Looks fantastic!

One last layout… especially since school is starting!  I love to take the first day of school pictures and this layout, First Day of School by Kirstiegai is a great layout showing the excitement of going back to school!  But the cute computer and fun journaling and an awesome picture make a wonderful layout!

Friday Recipes: Crunchy Corn Salad & Grilled Cabbage

Hey there everyone! Whit here to bring you my two favorite summer “sides” that are a delicious pair with tasty food fresh off the grill. I’m sure most of you agree that one of the best things about summer is BBQs with family and friends. The first recipe I’m going to share has always been a hit at places I’ve brought it! It is fresh, colorful and FULL of flavor!

Crunchy Corn Salad

2 Cans Whole Kernel Corn (drained)

½ Green Pepper (diced)

½ Red Pepper (diced)

Small Red Onion (diced)

1 Cup Mayonnaise

2 Cups Shredded Cheddar Cheese

Bag of Chili Cheese Fritos

Optional: 1 Jalapeño (diced)

  1. Place drained corn in a medium bowl.
  2. Cut, seed, and dice peppers and onions and place in bowl.
  3. Stir in mayonnaise and shredded cheese.
  4. Let salad set in refrigerator for 4+ hours.
  5. Serve salad on top of crunched up Chili Cheese Fritos.

Next I want to share more of a cooking technique for one of my favorite vegetables, cabbage. There are so many benefits of cabbage: it is loaded with important nutrients (like fiber and vitamin C), incredibly low in calories (15 calories per cup), and it is extremely cheap (sometimes around 50¢ a head when in season). However, I think cabbage is one of those vegetable that you either love or hate. Obviously I love it, but if you are on the fence about it, maybe preparing it this way will change your mind.

Grilled Green Cabbage *I usually cut this recipe in half and then prepare the other half another night*

1 Large Green Cabbage

1 Stick of Butter (cut into tablespoon portions)

½ Cup of Water

Salt/Pepper/Garlic Powder

  1. Preheat grill.
  2. Remove any dirty or wilted outer leaves and wash cabbage thoroughly.
  3. Cut cabbage in half lengthwise and remove the stems.
  4. Cut one half into 4-6 lengthwise wedges and then cut again across the middle.
  5. Transfer cabbage to double-layered foil sheet.
  6. Fold the sides of the foil up about  1”, kind of making a square boat and pour ¼ cup water of the wedged/cut cabbage.
  7. Place 4 tablespoons of butter around the cabbage
  8. Cover with foil and pinch the foil pack closed.
  9. Cook on grill for 25-30 minutes or until desired tenderness.
  10. Remove from grill and open foil pack to release steam; let cool for a few minutes.
  11. Sprinkle with salt, pepper, or any other favorite seasoning.

*Repeat steps 4-9 for other the ½ cabbage but prepare in a separate foil pack.

Wish I could have provided step by step pictures with the directions but I’m not that great with multi-tasking, haha! I hope you try one of these recipes out and get lots of compliments- there is nothing better! :) Have a very happy and fun rest of the summer!
